Sweet Potato Spinach & Green Beans Tapas @adventuresofzuzu

Ingredients

  • English Garden Peas
  • Zims Tribe Rosemary Thyme Lemon in Red Wine Vinegar
  • Zims Tribe Spicy OH! Relish.
  • 4 Sweet Potatoes, scrubbed clean
  • Spinach
  • 4 tbsp. butter
  • Mint 
  • Garlic
  • Salt
  • Black pepper

Instructions

  • Chop sweet potatoes into chunks,
  • Drizzle potatoes with Zims Tribe Rosemary Thyme Lemon in Red Wine Vinegar
  •  Smash Garlic cloves and add to tray
  • Preheat oven to 220ºC (200ºC fan). On a baking tray, prick sweet potatoes all over with a fork.
  • Bake until tender, 45 to 50 minutes.
  • Bring a saucepan of water to the boil. Add peas and mint and cook for 5–6 minutes, until tender.
  • Drain the peas, add butter and season with salt and pepper.
  • Shred Spinach add to peas, sweat for 3 mins Season with salt and pepper and serve wit half jar Of Zims Tribe  Spicy OH! R
